大麵炒 Stir-Fried Oily Noodles with a Taiwanese Style Meat Sauce

材料 Ingredients
油麵 Oil noodle 1-1/2 磅 lb (675g)
肉燥 Taiwanese style meat sauce 2 杯 cup
韭菜 Garlic Chive 1/2 磅 lb (225 g)
綠豆芽 Mung been sprout 1/2 磅 lb (225g)
雞鹽高湯 Chicken stock 1 杯 cup
白胡椒 White pepper 1 小匙 tsp

做法
1.油麵在冷水下略微沖洗後濾乾。(註:自己做的可省略此步驟。)
2.將豆芽洗乾淨, 把較長的根部及帶殼的部份摘掉。韭菜洗乾淨後切成4cm小段。
3.炒鍋加入2杯高湯和肉燥燒滾。
4.加入油麵,豆芽,韭菜和白胡椒粉翻炒到豆芽脫生即油麵熱透即可。



PROCEDURE
1.Rinse the oily noodles under running water then drain. (Note: skip this step if the noodles are home-made.)
2.Wash the bean sprouts, pinch off the longer roots and husks. Wash the garlic chives and cut them into 1.5" segments.
3.Add the Taiwanese Style Meat Sauce and stock in a wok. Bring the mixture to a boil.
4.Place in the oil noodles, bean sprouts, chives and white pepper. Cook over medium heat until the bean sprouts are done and the noodles are heated through, stir consistently.
